Name: Caramel Chocolate Eclairs
Ingredients: 12 Empty eclair shells; 2 c Caramel pastry cream; chilled; 1 c Chocolate ganache; at room temperature

No matter how dark things may appear to be, we must reckon with the invisible hand of God that works all things – yes, “all things” for our good (Rom. 8:28). As God’s children, we may not always appreciate what it is that God may be doing in our lives; but we are to trust that in every aspect of it God is fulfilling the best of plans that ultimately will be for our good. The alternative is too terrible to contemplate: things may contrive to negate the hand of God and ensure our doom. No! That can never be!

INGREDIENTS

12		Empty eclair shells
2	c	Caramel pastry cream; chilled
1	c	Chocolate ganache; at room temperature

INSTRUCTIONS

With a small paring knife, pierce a small hole at each end of each eclair.
Put pastry cream in pastry bag fitted with small plain tip. Insert tip into
one hole in one eclair and squeeze to fill. Place tip in other hole and
repeat. Repeat with each eclair until all are filled. Use a small offset
spatula to glaze each eclair with chocolate ganache. Let ganache set before
