INGREDIENTS
12 | Uncooked pearl barley | |
2 | Frozen lima beans, thawed | |
3 | Fresh tomatoes, or 19oz can | |
1 | Onion, chopped | |
2 | Cloves garlic, minced | |
Salt and pepper, to taste | ||
1 | Bay leaf | |
2 | t | Sugar |
5 | T | Parsley |
1/2 | t | Basil |
1/3 | c | Chicken broth |
1 | Bottle vermouth, or white | |
wine |
INSTRUCTIONS
Put sausage in cod frypan. Pour wine half way up sausages. Cover and steam for 15 mins. Remove cover and saute until brown. Remove from frypan. Using a little of the sausage fat, saute the onions and garlic. Add tomatoes, bay leaf, pepper, basiland sugar. Simmer 3 mins. Add broth and 1/2 cup wine. Add beans , sausage and 3 tablespoons of parsley. Cover and cook 45 mins. Add salt and pepper to taste. Sprinkle with remaining parsley.
