Name: Chantilly Potatoes
Ingredients: 4 Whole potatoes -- quartered; 3 tb Margarine -- or less; 1/2 c Fat-free plain yogurt; 1/4 c Parmesan cheese -- grated; 1/8 ts Salt; 1/8 ts Black pepper

In order to trust God, we must always view our adverse circumstances through the eyes of faith, not of sense. And just as the faith of salvation comes through hearing the message of the gospel (Romans 10:17), so the faith to trust God in adversity comes through the Word of God alone. It is only in the Scriptures that we find an adequate view of God’s relationship to and involvement in our painful circumstances. It is only from the Scriptures, applied to our hearts by the Holy Spirit, that we receive the grace to trust God in adversity.

INGREDIENTS

4		Whole potatoes — quartered
3	tb	Margarine — or less
1/2	c	Fat-free plain yogurt
1/4	c	Parmesan cheese — grated
1/8	ts	Salt
1/8	ts	Black pepper

INSTRUCTIONS

Preheat oven at 475.  Prepare a 1 1/2 quart baking dish with cooking spray.
Boil potatoes until tender.  Mash with margarine and 1/4 cup yogurt. Season
with salt and pepper.  Whip the remaining 1/4 cup yogurt until stiff.
Spread mashed potatoes in a  baking dish.  Sprinkle with grated Parmesan
cheese.  Bake until the cheese melts and the top is golden brown, about 20
minutes.
