Cheddar Cheese Potato Skins

Margarine; melted

Crushed garlic

Chopped parsley OR 2 tbsp. finely chopped green onion
Salt and pepper

Grated cheddar cheese; (or mozzarella or a combination or both)
INSTRUCTIONS
Preheat oven to 425F
Bake potatoes until tender (can use the microwave for this to speed up
process). Cool potatoes and slice lengthwise in half; carefully remove
pulp, leaving skin intact. Place skins on a foil lined baking sheet.
In small bowl, combine margarine, garlic, parsley and salt and pepper to
taste. Brush over the potato shells. Top with cheese and bake for 20
minutes or until crisp. Other toppings such as bacon, mushrooms, broccoli
florets can be added. Serve with sour cream.
