INSTRUCTIONS
Preheat oven to 350°F. Grease an 8"x4" loaf pan. Heat olive oil in a
large skillet over medium heat. Add mushrooms, celery, onion, and
carrot. Cook until vegetables are softened and liquid disappears. Let
cool.
Add chicken, bread crumbs, egg, basil, rosemary, salt, and pepper to
vegetables. Transfer to loaf pan. Bake about 1 hour or until golden
brown. Let stand in pan 10 minutes. Serve warm. Makes 4 servings.
