INGREDIENTS

30 ml Waitrose Vegetable Oil; (2tbsp)
200 g New potatoes; boiled and sliced
; (7oz)
1 md Red onion; finely sliced
5 ml Waitrose Fresh Rosemary; coarsely chopped
; (1tsp)
1 Waitrose Onion and Rosemary Focaccia
85 g Mascarpone cheese; (3oz)
40 g Fresh Parmesan cheese; grated (1 1/2oz)
1 200 g pack Waitrose Parmesan and
; Mascarpone
Chicken Breast Fillets; cut into thin
; strips

INSTRUCTIONS

Heat the oil in a large frying pan. Add the potatoes, onion and
rosemary and saut. over a medium heat for 5-6 minutes or until golden
brown. Remove from the heat and keep warm.
Cut the focaccia in half, take the bottom piece and spread with the
Mascarpone, then sprinkle with the Parmesan. Place under a hot
preheated grill and cook for 1 minute until brown.
Place the chicken pieces, then the onion and potatoes onto the grilled
focaccia, replace the top and cook in a preheated oven 200ºC, 400ºF,
gas mark 6 for 5 minutes.
To serve, cut the focaccia into quarters and serve with a mixed salad.

NOTES : To turn this sandwich snack into a meal, serve with a mixed
salad. The flavoured chicken breasts are ready cooked, making this a
speedy dish to prepare.
