INGREDIENTS

1/2 c Cornmeal
1 tb Chili powder
1 ts Ground cumin
1 ts Salt
4 Boneless; skinless chicken breasts, cut in 1-inch cubes
2 tb Vegetable oil; (up to 4)

INSTRUCTIONS

1.In a large mixing bowl, combine cornmeal, chili powder, cumin, and salt.
Add chicken and coat thoroughly.
2. In a large skillet, heat oil. Add chicken and cook 7 to 9 minutes,
turning once, until crisp. Drain on paper towels.
Makes 20 to 30 pieces.
