INSTRUCTIONS
Directions: In a food processor, combine the flour and salt. Add the
eggs one at a time and blend just until combined. Add the olive oil
and water. Blend just until the dough begins to pull away from the
sides. Remove the dough and knead until smooth. Divide the dough into
pieces and roll out until thin. Cut into 4 inch squares. For the
filling, melt the butter in a large saut. pan. Add the onions,
garlic, bell pepper and saut. for 3 minutes. Add the ground chicken
and cook for 4-5 minutes, stirring often. Add the egg yolks, parsley,
salt and pepper to taste. To assemble, place 1 teaspoon of the
filling onto each square. Brush the edges of the dough with water and
fold 2 corners together and seal like a dumpling. Repeat process for
remaining dough squares. They can be fried until golden on both sides
in olive oil or drop them into chicken soup, allowing to cook for 5
minutes before serving.
