INGREDIENTS

1/3 c Soy sauce
2 T Lime juice
2 T Water
1 1/2 T Cornstarch
1 lb Boneless chicken breast or
thigh meatcut into
bite-size pieces
8 oz Fresh mushrooms, cleaned and
sliced
1/2 lb Fresh snow peas
3 c Cooked rice

INSTRUCTIONS

Combine soy sauce, lime juice, water and cornstarch in a 2 qt. round
casserole. Stir chicken and mushrooms into soy sauce mixture. Cover
and stirring midway through cooking, microwave on high 7 to 8  minutes.
Add snow peas, cover and microwave on high 2 minutes or  until snow
peas are tender crisp. Serve over a bed of fluffy rice,  garnishing
with lime wedges or slices of lime.  Makes 4 servings. Posted to
