Recipe By: Weight Watchers
Rinse and dry chicken. Sprinkle with cinnamon and nutmeg. Heat oil in
medium skillet over medium-high heat. Add chicken and cook for 3 minutes,
or until lightly browned; turn chicken; add onion and ginger. Cook for 2-3
minutes, stirring frequently, until chicken is brown. Reduce heat; add
orange juice, currants and capers. Cover and simmer for 7-10 minutes until
chicken is thoroughly cooked. To serve, slice each chicken breast crosswise
and spoon remaining sauce evenly over top. Makes 4 servings.
