INSTRUCTIONS
1. To prepare the crust: In a small saucepot combine the jalapeno,
ginger, garlic, lime zest and juice, salt, peppercorns, sugar, and
white wine. Simmer the mixture for 5 minutes on medium heat. Most of
the liquid will be absorbed. Remove from the heat and cool.
2. To prepare the tuna: Pack the crust mixture onto the tuna steaks.
Let them absorb some of the flavors for 20 minutes at room
temperature before cooking. Preheat a heavy pan very hot for 5
minutes. Drizzle the tuna with olive oil, then sear for only about 30
seconds on each side. Serve.
