Coconut Chicken Bites

INSTRUCTIONS
Here is a couple for you Belinda...I have 3 cookbooks that are called The 5
in 10 cookbooks. They are 5 ingredients in 10 minutes (prep) or less. These
things are lifesavers around my house!!
:) (I seem to have a chocolate/raspberry thing going here!)
Heat oil over high heat to 375 (to test, drop a shred of the coconut in and
if it sizzles immediately, its ready)
While oil is heating, cut chicken into 1" squares. Place coconut on a
plate. Pour beer into a bowl, add flour and wisk until smooth. Dip chicken
into the beer batter, then roll in the coconut to coat all sides. Add
chicken squares to the oil in 2 or 3 batches (be careful not to crowd them)
Cook, turning occasionally, until golden and cooked through (about 2 mins)
Remove with a slotted spoon and drain on paper towels.
Maggie's notes: This says it makes 6 servings...HA....I have to triple this
to satisfy my family of 5.
