INGREDIENTS

1 tb Olive oil
1/4 c Finely chopped onion
1 ts Minced garlic
1 cn Tomatoes; (14 oz.)
1/4 ts Salt
1/8 ts Thyme
2 tb Chopped fresh flat-leaf parsley
1 1/2 lb Cod fillet; 1-inch thick
3 tb Chopped fresh flat-leaf parsley
1 tb Extra-virgin olive oil
1/2 ts Minced garlic
1/4 ts Salt
1/4 ts Freshly ground pepper

INSTRUCTIONS

TOMATO SAUCE
1. Make Tomato Sauce: Heat oil in medium skillet over medium heat. Add
onion and cook until tender, 3 minutes. Stir in garlic and cook 10 seconds.
Add tomatoes, salt and thyme; cook over high heat, breaking up tomatoes
with a spoon, until thick, about 10 minutes more. Remove from heat and stir
in parsley.
2. Meanwhile, cut cod into 4 pieces and arrange in shallow microwaveproof
dish. Combine parsley, oil, garlic, salt and pepper in small bowl; spread
over cod. Cover with wax paper and microwave on High 6 to 8 minutes, or
until cod is opaque throughout. Spread tomato sauce on serving platter and
arrange cod on top.
