INSTRUCTIONS
Heat the oil in a heavy frying pan and saute the pepperoni, mushrooms
and onion for 2-3 minutes, stirring occasionally.
Crack the eggs into a jug and beat together with the cheese, parsley
and seasoning to taste.
Pour the egg mixture into the pan and cook over a moderate heat for
5-6 minutes until the underside is golden.
Place the pan under a hot grill for a further 3-4 minutes until the
frittata has set and the top is golden.
Turn out onto a warmed plate and serve immediately with French bread
and a green salad.
