INSTRUCTIONS
Preheat oven to 375°F, prepare pans. Mix dry ingredients together & stir in
cornmeal. Melt butter, add egg & milk & combine well. Add dry mix to wet
mix until just combined. Spoon into pans & bake for 15-20 mins. Serve hot!
Makes 8 large muffins. An old fashioned Waterloo County favourite.
Variation: Add 1/2 cup corn niblets or 1/2 cup crumbled cooked bacon.
