INGREDIENTS
| 1 | c | Flour |
| 1 | tb | Baking powder |
| 1/2 | ts | Salt |
| 1/2 | c | White sugar |
| 1 | c | Cornmeal |
| 1/2 | c | Butter or margarine |
| 1 | Egg | |
| 3/4 | c | Milk |
INSTRUCTIONS
Preheat oven to 375°F, prepare pans. Mix dry ingredients together & stir in cornmeal. Melt butter, add egg & milk & combine well. Add dry mix to wet mix until just combined. Spoon into pans & bake for 15-20 mins. Serve hot! Makes 8 large muffins. An old fashioned Waterloo County favourite. Variation: Add 1/2 cup corn niblets or 1/2 cup crumbled cooked bacon.
