INGREDIENTS
| 1 1/2 | c | Vegetable stock |
| 3/4 | c | Couscous |
| 1/2 | c | Radishes, coarsely chopped |
| 1/2 | c | Frozen peas, thawed |
| 1/2 | c | Frozen corn, thawed |
| 1 1/2 | tb | Olive oil |
| 1/2 | ts | Lemon zest, grated |
INSTRUCTIONS
Bring stock to a boil. Stir in couscous. Remove from heat and cover. Set aside 15 minutes. Combine remaining ingredients in a bowl. Stir in couscous until well mixed.
