INGREDIENTS
3 | c | Diced cooked chicken |
3 | c | Diced nectarines |
1 | c | Thinly sliced celery |
1 | T | Minced green onion |
Juice of 1 medium orange | ||
about 1/3 cup | ||
1/2 | t | Salt, or to taste |
1/8 | t | Fresh ground pepper |
1/2 | c | Heavy cream, whipped stiff |
1/2 | c | Mayonnaise |
Crisp greens | ||
1/4 | c | Finely chopped walnuts |
INSTRUCTIONS
In a large bowl, combine chicken, nectarines, celery, onion, orange juice, salt and pepper; set aside. Lightly combine whipped cream and mayonnaise and then fold into chicken mixture just to coat. Spoon onto plates or bowls lined with greens. Sprinkle with walnuts.
