INGREDIENTS
1/2 | c | Salad Oil |
1/4 | c | Vinegar |
1/4 | c | Onions, chopped |
1 | t | Salt |
1 | ds | Pepper |
2 | t | Worcestershire Sauce |
2 | lb | Round Or Chuck Roast, cut in |
1 1/2 " cubes* | ||
1 | Cucumber, cut in 1/2" slices | |
Fresh Mushrooms | ||
Cherry Tomatoes | ||
Metal Skewers |
INSTRUCTIONS
Combine all ingredients for marinade. Mix well. Add beef cubes. Let meat marinate at least 2 hours, turning occasionally. Meanwhile prepare hot coals. To assemble skewers: 1 lge. whole mushroom, 1 cube of beef, 1 slice of cucumber. Repeat. Leave space on end of skewer for cherry tomato. Place skewers 4 to 5 inches from heat. Cook about 25 minutes. Turn often and baste with marinade. Add tiny ripe tomatoes to end of each skewer for last 5 minutes.
