BOWL (BEFORE POURING IN TH
This is a great Asian soup that takes literally minutes to prepare. Be
careful not to overcook the rice noodles, they really need to be just
heated through. The soup is light, yet very satisfying because of its
fabulous flavours and you can add just about anything to it.
Bring 1 litre of water to the boil. Turn off heat. Add 1 tablespoon soy
sauce and 2 sachets of dashi powder and stir. In a small soup bowl put
shredded giner and pour in stock.
For more substantial soup add to the bowl (before pouring in the stock):
bean sprouts finely sliced mushrooms silken tofu - wither steamed or fried
fresh rice noodles - heated steamed asparagus chilli
Sprinkle finely sliced spring onion on soup.
