INGREDIENTS
3 | c | Cooked white and wild rice |
Mix | ||
1 | Tart green apple, cored | |
And chopped | ||
1 | c | Cooked ham, diced |
1 | c | Sliced celery |
2/3 | c | Chopped dates |
1/2 | c | Red onion, finely chopped |
1/2 | c | Olive oil, extra light |
1/4 | c | Fresh orange juice |
1/4 | c | Red wine vinegar |
Salt and pepper, to taste |
INSTRUCTIONS
Dice 4 ounces of cooked ham to make about 1 cup. Dressing: Whisk together all the ingredients untill well combined. Salad: Combine all ingredients for the salad and toss to mix. Add the dressing and toss to coat. Chill 2 to 3 hrs. before serving.
