California Salad 4 Servings

INGREDIENTS

3 c Cooked white and wild rice
Mix
1 Tart green apple, cored
And chopped
1 c Cooked ham, diced
1 c Sliced celery
2/3 c Chopped dates
1/2 c Red onion, finely chopped
1/2 c Olive oil, extra light
1/4 c Fresh orange juice
1/4 c Red wine vinegar
Salt and pepper, to taste

INSTRUCTIONS

Dice 4 ounces of cooked ham to make about 1 cup.  Dressing:  Whisk
together all the ingredients untill well combined.  Salad:  Combine all
ingredients for the salad and toss to mix. Add the  dressing and toss
to coat. Chill 2 to 3 hrs. before serving.  Date: Sat, 29 Jun 1996
