Nuts, ground–make each a heaping tablespoon. |

INSTRUCTIONS
Make a snow with whites. Gradually add sugar. At slow speed beat yolks into
whites. Slowly fold in dry ingredients. Fry tablespoon of mixture (to make
latkehs) in hot oil; place 1/2 teaspoon jam onto each latkeh (almost in the
middle), fold latkeh in half, and fry both sides of the half moon. Sprinkle
with sugar if desired.
