3 | Scallions, finely chopped | |
1 | 12 oz can tuna, drained and | |

1 1/2 | t | Dry mustard |
3/4 | c | Soy sauce |
1 | T | Sesame or peanut oil |
1 1/2 | t | Lemon juice |
Salt and freshly ground | ||
black pepper | ||
Paprika |
INSTRUCTIONS
Slice eggs in half, lengthwise. Remove hardened yolks to a mixing bowl. Add scallions, tuna, mustard, soy sauce, oil, lemon juice, and salt and pepper to taste. Mix well. Fill egg white halves with tuna/egg yolk mixture. Sprinkle tops with paprika. Note: Crab meat or abalone may be substituted for the tuna.
