INSTRUCTIONS
1. In a deep, 2-quart, heat-resistant, non-metallic casserole place
potatoes and hot water to cover. Sprinkle with the 1 teaspoon salt. Heat,
uncovered, in Microwave Oven 12 minutes to 18 minutes or until potatoes are
fork-tender. Drain excess water. 2. Partially mash potatoes with a potato
masher. 3. Add egg, milk, butter or margarine, the 1 teaspoon salt and
pepper. Beat with electric mixer until smooth. 4. Place in a
heat-resistant, non-metallic serving dish and sprinkle with paprika. Heat,
uncovered, in Microwave Oven 4 minutes.
