Raisins (dusted with 1 teaspoon flour) |

Chopped walnuts (optional..I leave out because of the kid's nut allergy…but better with the nuts, yum…) |
INSTRUCTIONS
Blend together in large bowl of mixer the sugar, applesauce, water,
shortening, and eggs. When blended, and the flour, soda, cinnamon, cloves,
allspice, salt, and baking powder. Mix well. By hand, fold in the raisins
and nuts.
Pour into a greased and floured tube or Bundt pan. Bake in a preheated 350
degree oven for about 60 minutes, or until the cake tests done. Coll about
20 minutes before removing from the pan. Dust with confectioners sugar or
use your favorite glaze.
NOTE: I make this at Christmas and bake in mini-loaf pans. You can get
about 6 from this recipe. Freeze, and then they can be used in your gift
baskets...adjust baking time, of course.
