INGREDIENTS
Vegetable cooking spray | ||
1/2 | c | Chopped onion |
1/4 | c | Chopped celery |
1/4 | c | Chopped green pepper |
1 | 15 oz black beans drained | |
1 | 14.5 oz whole tomatoes | |
Undrained & chopped | ||
1 | t | Sugar |
3/4 | t | Italian seasoning |
1/4 | t | Garlic powder |
1/4 | t | Pepper |
1/8 | t | Salt |
1/8 | t | Hot sauce |
1/3 | c | Long grain white rice |
Uncooked | ||
1/4 | t | Ground tumeric |
INSTRUCTIONS
Coat a medium saucepan with cooking spray, and place over medium-high heat until hot. Add onion, celery and green pepper; cook, stirring constantly, until tender. Stir in drained beans and next 7 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 minutes or until thickened, stirring frequently; set aside. Combine water, rice, and turmeric in a saucepan; bring to a boil. Cover, reduce heat, and simmer 20 minutes. Remove rice from heat; let stand 5 minutes or until liquid is absorbed. Serve black bean mixture over rice.
