Boil the chicken breasts, then cut or shred into pieces. Mix chicken, 1/2
c. salsa, chopped onion and sour cream together. Fill shells, roll up
burrito style and place in 13" x 9" pan. In small bowl, mix remaining 1 c.
salsa and cream of chicken soup. Pour over shells. Top with shredded
cheese. Bake at 350 degrees (F) for about 30 minutes or until cheese is
nicely melted.
Sometimes, I use reduced fat or fat-free sour cream, reduced fat cream of
chicken soup, and reduced fat cheese (which still melts well). It tastes
just as good and I think makes a pretty healthy dish. Everyone that has had
these really likes them. And of course, you can use whatever "heat" of
salsa you want, depending on your taste.
