INGREDIENTS

1 lb Lean ground beef
1 T Oil
3 c Frozen potatoes with onions
and peppers
1 c Salsa
2 t Chili powder, if desired
4 oz Shredded colby-monterey jack
cheese blend about 1
cup

INSTRUCTIONS

In large nonstick skillet, brown ground beef. Remove ground beef from
skillet; cover to keep warm. Discard drippings. In same skillet, heat
oil over medium heat until hot. Add potatoes; cook and stir 8 to 10
minutes or until browned. Stir in salsa, chili powder and ground  beef.
Cook 5 to 8 minutes or until thoroughly heated, stirring  occasionally.
Sprinkle with cheese. Cover; cook 2 to 4 minutes or  until cheese is
melted.  Nutrition Information Per Serving: 460 Calories, 28 g Fat, 720
