INGREDIENTS

6 Eggs; beaten
1 tb Soy sauce
1 c Bean sprouts
1/8 ts Pepper, white
1 tb Oil, vegetable
1 ts Salt
2 Scallions; thinly sliced
Oil, vegetable; for frying
1 md Onions; minced
1/2 lb Shrimp; finely diced
2 tb Soy sauce
1 tb Sherry, dry
1 tb Cornstarch
1 tb Cornstarch

INSTRUCTIONS

SAUCE
Rinse bean sprouts in cold water. Heat oil in pan and add scallions,
onion & sprouts. Stir fry 1". Add cornstarch, soy sauce, shrimp, salt &
pepper. Mix well. Remove to dish & allow to cool. Combine with eggs.
Heat 2 T oil in pan & ladle in 1/6 of egg mix. Fry til golden on both
sides. Keep pancakes warm in low oven, while making sauce. Combine sauce
ingredients in small pan, bring to boil & simmer gently til thickened.
Makes 6 pancakes.
