INGREDIENTS

Eggplant; Sliced lengthwise |

Salt and pepper; To taste |

Romano cheese; Grated |

Parsley Flakes |
|
|
Bread Crumbs |

Garlic Powder or garlic cloves; To taste |

Spaghetti or tomato sauce |
|
|
Oregano; To taste |

INSTRUCTIONS
Place sliced eggplant in layers in baking dish. Sprinkle each layer with
salt. Drain after 3 hours. Preheat oven to 375 degrees. Dip pieces into
mixture of egg, salt, pepper, cheese, and parsley flakes. Next, dip in
bread crumbs and fry until browned on both sides. Place fried eggplant in
baking dish, sprinkling each layer with cheese, oregano, garlic powder* and
sauce. Cover top layer with sauce. Cover baking dish, and cook at
375 for 20 - 25 min.
*If using cloves of garlic, insert a toothpick through center of each clove
so it can be easily found before serving.
NOTES : This can be made ahead and heated just before serving. Also
freezes well. One of my favorites!
