Ingredients: 1 lg Eggplant; 1/2 c Bread crumbs; 1/2 c Grated Parmesan cheese; 1/4 c Butter; Salt and pepper to taste; 1/2 lb Mushrooms; sliced; 2 cn (8-oz) tomato sauce

INGREDIENTS

INSTRUCTIONS

Peel eggplant and cook until tender; cut into pieces or mash. Layer
ingredients in 1-1/2 qt baking dish. Bake uncovered at 350  for 30 minutes.
