INGREDIENTS
1 | lb | Hamburger |
1 | Onion, chopped | |
1/2 | Green pepper, chopped | |
1 | Clove garlic, crushed | |
1 | Eggplant | |
1 | no. 2 tomatoes | |
1 | Tomato paste | |
3 | T | Salad oil |
1/2 | lb | Mozzarella cheese |
Grated Parmesan cheese |
INSTRUCTIONS
Saute onion, green pepper & garlic in oil. Add hamburger & brown, adding salt & pepper to taste and 1 bay leaf if desired. Add tomatoes & tomato paste & simmer about 1 hour. Peel & slice eggplant. Salt, pepper & flour each slice. Brown in oil in a separate skillet. In a casserole, pladce layer of eggplant & cover with some of the sauce, then add a layer of Mozzarella.
