INSTRUCTIONS
Wash a jar or jars and lids in hot soapy water; rinse.(I always use bleach
water and run them through the dishwasher just to be safe) Do not use
citrus fruit, apples, pears or bananas. Use sound ripe fruit, just a few
pieces of each type, and wipe fruit gently. Do not wash, peel or pit
fruit. Only melon should be peeled, seeded and cut in large chunks. Layer
fruit and sugar in prepared jar. Stir lightly. Pour rum over fruit to
cover. Seal jar tightly. Let mature in cool dark place 3 months. The Rumpot
can be added to as more fruit becomes available. Always add equivalent
sugar and more rum to cover fruit. Serve with cream or yogurt, add to fresh
fruit salad, or use of fill hollowed out melon or tart shells.
