To Lisa, who is looking for a bran muffin recipe: Here is one that I have
modified to be FF. The original recipe is at least 20 years old and came
from a restaurant called The Village House in San Jose, Calif.
Pour hot water over Bran Buds and set aside. Mix together applesauce,
sugar, eggs and buttermilk. In a separate bowl, mix flour, soda and salt.
Stir into wet ingredients. Add cooled Bran Buds and All Bran. Mix well.
Spray muffin tins lightly with cooking oil spray. Fill tins 2/3 full. Bake
at 400F for 15 minutes. Makes 2 dozen muffins.
This makes a lot of muffins and can be easily cut in half. I always freeze
them, then grab one on my way out of the house in the morning. I imagine
prune puree could be substituted for the applesauce, but I've not tried
that. (There's already a LOT of bran in these!) You can also add raisins if
you like.
