Imitation crab meat (or real if you wish), drain well if using canned crab |

Cloves garlic; crushed (up to 2) |

INSTRUCTIONS
In a blender container or food processor bowl, combine fish crab, eggs,
flour, onion, lemon peel, lemon juice, garlic, salt and pepper. Cover and
blend until smooth. Lightly oil skillet and heat. Spoon about 1/4 cup
batter onto skillet and spread to a patty 3 inches in diameter. Cook 3
minutes per side or until golden. Repeat with remaining batter. Keep
fritters warm in a 325 oven while frying remaininder. Arrange on a warm
