INSTRUCTIONS
SAUCE
Whisk the sauce ingredients together in a pan and heat until boiling. Peel
and finely chop the onion and add to the boiling sauce. Add the tamarind
and a little water to keep it runny. Chop the chillies in half and de-seed.
Add to the boiling sauce. Add the shark steaks and cook until the oil has
risen to the surface of the mixture, meaning that it is ready.
