INSTRUCTIONS
Grate potatos and onions into mixing bowl. Drain off excess liquid. Add
eggs and beat until well-blendedMix and sift together, Flour, salt, pepper
and baking powder.. Stir into potatos mixing well Heat enough shortning or
oil in a heavy skilletso that at least 1 inch deep. When hot -(375 degrees)
drop batter be tablespoons into fat. Fry on both sides over medium heat
until golden crisp and fluffy - drain.
Serve hot with applesauce, or for dairy meals with sour cream.. Makes
approx. 1 1/2 doz. pancakes N>B> instead of greating by hand, use blender
and dice first
