INGREDIENTS

250 g Plain flour, 8oz
1 pn Salt
125 g Butter, melted 4oz
2 T Water
25 g Butter, 1oz
1 150 gram car goats cheese
1 200 gram car Creamy full fat
soft cheese
4 T Creme fraiche
2 Eggs, medium-size
1 T Freshly chopped chives
Salt and freshly ground
black pepper

INSTRUCTIONS

To make the pastry, place the flour, salt, butter and water in a bowl
and mix well. Press into a 20 cm (8inch) fluted flan case and bake
blind in a preheated oven 200 C, 400 F, Gas Mark 6 for 12-15 minutes.
For the filling, beat together the butter, cheeses, creme fraiche,
eggs, chives and seasoning. Spoon into the pastry case and return to
the oven for 25-30 minutes until golden.  Converted by MC_Buster.
NOTES : A classic flan, combining the distinctive flavours of goats
cheese and a hint of chives. Delicious served hot or cold with salads.
