INGREDIENTS

25 g Butter, 1oz
25 g Plain flour, 1oz
450 Milk, 3/4 pint
50 g Parmesan cheese, grated
2oz
Salt and freshly ground
black pepper
1 70 grams pac Parma ham
sliced 3oz
1 500 gram bag tagliatelle
verdi 1lb
25 g Pine nut kernels, toasted
1oz

INSTRUCTIONS

Melt the butter in a saucepan, add the flour and cook for 1 minute,
stirring occasionally. Remove from the heat and gradually stir in the
milk. Return to the heat and bring to the boil, stirring continously.
Remove from the heat, add 25g (1oz) of the cheese and season to taste.
Gently stir in the Parma ham.  Meanwhile cook the pasta following
instructions on the pack, drain  quickly. Mix well with the cheese
sauce.  Transfer to a warmed serving dish, sprinkle over the pine nuts
