INGREDIENTS

6 c Fresh peeled; sliced peaches (about 6 medium sized)
1/2 c Packed brown sugar plus
1/4 c Eqivalent brown sugar substitute
1 tb Cornstarch
1 tb Lemon juice
1 ts Cinnamon
1 1/2 c Flour
1/2 c Sugar plus
1/4 c Equivalent sugar substitute
2 ts Baking powder
1/3 c Liquid butter substitute
1/3 c Skim milk
1/4 c Liquid egg substitute
1/4 c Water
Fat-free cooking spray (enough to cover a 1 1/2 qt casserole dish)

In a 3 quart saucepan, combine peaches, brown sugar & equivelent,
cornstarch, lemon juice and cinnamon.  Bring to a boil, stirring
constantly. Boil and stir one minute. Pour mixture into a 1 1/2 qt
casserole dish that's been sprayed with a fat-free cooking spray.
Heat oven to 350.
Combine flour, sugar & equivalent, baking powder.  Stir in butter
substitute with a fork until moistened and it resembles course crumbs. Add
skim milk, water and egg substitute. Mixing just until dry ingredients are
moistened. Drop by scan 1/4 cupfulls over the hot filling. Bake 30-35
minutes or until topping is light brown. Serve with non-fat Dream whip or
non-fat frozen yogurt.
