INGREDIENTS

3 1/2 c Diced peeled peaches, (2-1/2 pounds)
1/4 c Diced red onion
2 tb Finely chopped fresh cilantro
1 tb Minced seeded jalapeno pepper
2 tb Rice vinegar
1 ts Lemon juice
1 Clove garlic, minced

INSTRUCTIONS

Combine all ingredients in a bowl, and stir well. Cover and chill. Yield:
3-1/2 cups (serving size: 1/4 cup).
Serving Ideas : Serve with pork tenderloin.
