INGREDIENTS

450 g Ripe tomatoes; peeled and halved
1 Spring onion with a little green leaf on
1 Sliced onion; 5cm diameter and
; 5mm thick
3 lg Basil or 5-6 mint leaves
2 ts White wine vinegar
1 tb Olive oil
125 ml Water
1 ts Salt
1 ts Sugar
A few grinds of black pepper

INSTRUCTIONS

Liquidize the ingredients together, then strain through a nylon sieve.
Taste, add more seasoning if necessary. Serve unadorned in tall glasses.
