1 tb Finely chopped salad onion or shallots; (spring onions)
4 Fresh basil leaves; finely chopped or

1 tb Lemon juice
Few drops balsamic vinegar; (optional)
Salt and freshly milled black pepper

INSTRUCTIONS

Halve the tomatoes and gently squeeze away the seeds. Cut the flesh into
tiny dice and place in a small mixing bowl. Add the onion, basil leaves,
oil, lemon juice and a few drops balsamic vinegar (if used) and mix gently.
Season to taste.
