INGREDIENTS

1 T Olive oil
1/2 Yellow onion, diced
2 Cloves garlic, minced
8 Roma tomatoes, peeled
seeded and diced
1/4 t Thyme
1 T Fresh basil leaf
1/2 t Black pepper
1 Tiny pinch cinnamon, or to
taste
1/2 c White wine

INSTRUCTIONS

Heat oil in heavy sauce pan over medium heat. Saute onions and garlic
until they are tender and fragrant. (Do not allow them to brown.) Add
diced tomatoes, herbs, cinnamon and wine. Cover and adjust heat to
allow mixture to simmer. Remove lid and allow sauce to reduce to
proper consistency. Season with sea salt and black pepper as desired.
