INGREDIENTS

3 T Unsalted butter
1 T Olive oil
1 lb Fresh wild mushrooms
coarsely chopped
3 Cloves garlic, finely
chopped
Salt and freshly ground
pepper to taste
1/4 c Flat-leaf parsley, finely
chopped
1 lb Cheese, grated
Vegetable oil

INSTRUCTIONS

How to prepare the mushrooms:  Heat the butter and olive oil in a large
saut pan until almost  smoking. Add the mushrooms and saut for 3-4
minutes. Add the garlic  and season with salt and pepper, continue
cooking for 1 minute.  Remove the pan from the heat and stir in the
parsley. Keep warm.  How to Prepare the Frico:  Brush a nonstick
skillet with oil and place over medium-low heat.  Spread about two
tablespoons of the grated cheese in a circle about  three inches in
diameter. Make sure the layer of cheese is not too  thick; the wafers
should be crispy, not chewy. Cook the wafers,  flattening with a wooden
spoon or spatula, until melted and golden  brown on one side, about 2
minutes. Flip over and cook until just  set, about 1 minute. Top with
