INGREDIENTS

1 1/2 c Corn flour; (or 1 cup flour plus 1/2 cup cornmeal)
1/2 ts Salt
1 ts Finely ground black pepper
1/2 ts Cayenne
2 Dozen oysters or Catfish Filets or Sole filets
Veg oil for deep frying; (360-375 deg. F.)

INSTRUCTIONS

Prepare like above recipe cooking for 3-4 minutes.
(Optional: Use egg and milk/buttermilk to dip the fish in before dregging,
works well for shrimp)
(Optional: Use just flour and cornstarch for Calamari)
(Optional: For Fried Clams, use soft shells (Ipswich) or razors, don't use
cherrystones; Soak them in milk and use equal parts of flour and cornmeal)
