INSTRUCTIONS
Trim okra, and cut into 1/2-inch slices. Toss with flour.
Beat egg whites at high speed with an electric mixer until stiff peaks
form; fold in okra. tir in breadcrumbs, coating okra well.
Pour oil to a depth of 2 inches into a Dutch oven; heat to 375 .
Fry okra until golden brown. Drain on paper towels. Sprinkle with salt.
Makes 4 servings.
