INGREDIENTS

4 c Cooked rice, cold
1 c Cooked chicken or pork, cut (or torn) into very small pieces
1/3 c Carrots, cut into very small pieces, and steamed or boiled until crisp-tender
2/3 c Other veggies (water chestnuts in small pieces, green pepper in small pieces, peas, baby corn) whatever we're in the mood for
2 tb Green onions, cut into very small pieces (up to to 1/4 c.)
1 Eggs, beaten (up to 2)
2 tb Soy sauce or to taste

INSTRUCTIONS

Heat a large skillet and add a small amount of oil (a couple of tblesp?).
Add rice and stir-fry till heated thru.  Add meat and veggies and stir-fry
a few more minutes. Push all to one side. Pour beaten egg(s) into cleared
side, trying to keep away from rice mixture (you may need to add a touch
more oil here to cooke the egg in). Cook until done. Cut into small shreds
or chunks with spatula and combine with rice mixture. Add soy sauce and
stire thoroughly. Serve immediately.
