FRITATA
ARUGULA SALAD
Directions:
Fritata - In a large bowl, combine all ingredients, whisking until well
combined. Pour mixture into a 9" baking pan. Place in a 350 degree oven for
45 minutes or until cooked through.
Salad - Mix together all the lettuces, vegetables and cheese. In a separate
bowl, whisk together the vinegar, oil and salt and pepper. Pour dressing
over the salad and toss to combine. Serve with fritata.
