INSTRUCTIONS
Combine eggs and 1/3 cup of the cheddar cheese. Melt butter in a 10"
skillet. Add potato, bell pepper, onion, bacon and garlic to butter. Saute
5 minutes. Stir in egg mixture and spread evenly in bottom of skillet. Cook
over medium heat for 5 minutes or until almost set. Place skillet in
preheated 450 degree oven (make sure skillet is oven-proof) for 5 minutes
or until set. Sprinkle with remaining cheese. Bake until cheese melts.
Yield: 2 servings. Note: 4 egg whites and 1 egg yolk can be substituted for
the whole eggs. Serve with a green salad for a quick and delicious supper.
