INSTRUCTIONS
Heat the milk. Whisk together the sugar and egg yolks, add the milk and
return to a rinsed out pan. Bring up the temperature until the custard
thickens, then strain and cool it. Blend in the cheeses and freeze in a
sorbetiere.
